Curried Chicken (Poulet en Kari)

Ingredients

• A small chicken
• 1 Spanish onion
• 1 oz. butter
• 1 dessert-sp. curry powder
• 1 tea-sp. curry paste
• 1 dessert-sp. chutney
• A little flour
• 1 tea-sp. salt
• 1 tea-sp. sugar
• Stock
• Lemon juice
• Boiled rice

Method

   Cut the chicken into joints, removing skin.

   Fry the sliced onion in butter until brown.

   Coat chicken pieces with flour and add to onions with sugar, salt, chutney, and mixed curry powder and paste.

   Cook for 10 minutes, then add enough stock to cover.

   Simmer until chicken is tender.

   Add lemon juice and cream if desired.

   Serve with boiled rice.
