Cucumber Sandwich with Smoked Salmon a la Gustaf

Ingredients

• eight slices of bread
• two spoons of butter
• one half pound of salmon
• a large cucumber
• two spoons of dissolved Cox’s gelatine
• cayenne pepper
• salt

Method

1. 1

   Slice the bread in even slices, cut it out with a round biscuit cutter and spread with butter and chopped smoked salmon.

   Decorate with a strip of stirred butter.

   Peel and slice the cucumber into thick slices shaped like stars.

   Fill the cucumber with a mixture of chopped salmon, chili sauce, chili powder, gelatine, and whipped cream.

   Leave on ice until cold, then fill the cucumber.
