Croquettes

Ingredients

• 2 cups cooked meat, (beef, veal, lamb, chicken or fish)
• 1 teaspoon chopped parsley
• 1% teaspoon salt
• ly teaspoon pepper
• 2 tablespoons butter
• 2 tablespoons flour
• 1% cup stock or water
• 14% cup chopped mushrooms
• 1 egg yolk
• 1 egg, beaten with 2 tablespoons oil
• fine bread crumbs

Method

   Chop the meat or grind it.

   Add parsley, salt, and pepper.

   Melt butter, stir in flour, add water, and blend.

   Add meat and mushrooms, simmer until thick.

   Chill, add egg yolk, form into balls or ovals, and coat with breadcrumbs.
