Creamed Sweet Potatoes

Ingredients

• Cubed sweet potatoes, 2 cups
• Paprika, a pinch
• Butter, 2½ tablespoons
• Flour, 2 tablespoons
• Milk, 1 cup
• Pepper, a pinch
• Salt, ½ teaspoon

Method

   Cut cold boiled potatoes into 1/2-inch slices and slices into cubes to make the 2 cups.

   Put on saucepan with butter and cook for 3 minutes but do not brown.

   Add salt, pepper and paprika.

   Sprinkle with flour, then pour on milk and cook very slowly for 25 minutes.
