Corn Meal Griddle Cakes

Ingredients

• two cupfuls of sifted corn meal
• a cupful of wheat flour
• a teaspoonful of salt
• three well-beaten eggs
• enough sour milk to make the mixture the right consistency
• a teaspoonful of baking-soda

Method

   Scald corn meal and mix with wheat flour and salt.

   Add eggs and thin with sour milk.

   Beat until light, then add baking soda dissolved in water.

   If using sweet milk, replace soda with baking powder.
