Cocoanut Pound Cake

Ingredients

• half a pound of batter
• a pound of sifted floor
• one pound of powdered sugar
• two teaspoonfuls baking powder
• a pinch of salt
• a teaspoonful of grated lemon-peel
• quarter of a pound of prepared cocoa-nut
• four well-beaten eggs
• and a cupful of milk

Method

   Beat butter to a cream, add flour, sugar, baking powder, salt, lemon-peel, coconut, eggs, and milk.

   Mix thoroughly, butter the tins, line with buttered paper, pour in the mixture to a depth of an inch and a half, and bake in a good oven.

   Spread icing over when baked and return to the oven to dry the icing.
