Cocoanut Candy

Ingredients

• one pound of loaf sugar
• a wineglassful of cocoanut-milk
• a piece of butter the size of a walnut

Method

   Put sugar, cocoanut milk, and butter into a saucepan over the fire.

   When it boils, add coarsely grated cocoanut.

   Boil for ten minutes, stirring constantly.

   When cooked, cool the mixture in cold water and beat until nearly cold.

   Pour onto buttered plates and leave to set.
