Cock-a-Leekie Soup

Ingredients

• 1 small fowl for boiling
• 1 turnip
• 2 cloves
• 2 ozs. rice
• 1 carrot
• 1 onion
• 1 small bunch of young leeks
• Salt and pepper
• Salt and pepper

Method

   Truss the fowl, put it in a stew-pan with enough water to cover, add salt, and boil.

   Remove scum, add turnip, carrot, and onion.

   When fowl is tender, remove it.

   Strain broth, add leeks and washed rice, boil for half an hour.

   Cut fowl into pieces, add to soup, and serve with chopped parsley.
