Cinnamon Macaroons

Ingredients

• A lb. ground almonds
• A lb. icing sugar
• 1 oz. flour
• A tea-sp. ground cinna- mon
• Some white of egg
• Icing. — 3 tab.-sps. icing sugar
• 1 tea-sp. flour
• white of egg

Method

   Sieve the flour, icing sugar, and cinnamon onto the baking-board, and mix with the ground almonds.

   Add enough white of egg to form a very stiff paste.

   Work until smooth and elastic, then form into a long roll.

   Prepare the icing by mixing flour and icing sugar, binding with a little white of egg.

   Spread over the almond paste and cut into fingers.

   Bake until light brown and firm.
