When the liquid is reduced to one quart, take from fire and when cool strain through a coarse cloth, squeezing hard to extract all the juice. When cold remove all the fat and return to fire. When the bouillon reaches the boiling point stir in the white and shell of one egg, boil half a min- ute, skim and strain once more, serve hot in cups.
