Chicken or Meat Salad. — Use any cold meat, preferably chicken or veal. Have this cut into small dice. Individual rule : Two rounded teaspoons meat, and one of celery. Mix with a little of the mayonnaise dressing. Put into a suita- ble dish. Pour the rest of the dressing over the top and garnish with celery leaves and capers
