CHEESB TIMBALE. Mrs. Seely's Cook Boole. Mix one cup of cream, one tablespoonful of butter, and two tablespoonfuls of flour together, and stir over a moderate fire until the mixture comes to a boil, then stir in five tablespoonfuls of grated Parmesan cheese. Strain through a puree sieve and set away. When cold, stir in three well-beaten eggs and salt and white pepper to taste
