CHEESE SOUFFLE 2 tablespoons butter 1/5 teaspoon red pepper 3 tablespoons flour 3 egg yolks % teaspoon salt 3 egg whites 1 cup milk 4 lb. grated cheese Melt butter in sauce pan. Add flour, salt and pepper mixed and sifted. Stir to smooth paste. Add milk gradually, while stirring constantly. Then add cheese. When well blended remove from heat, add yolks of eggs, well beaten. Fold in stiffly beaten egg whites. Pour in buttered baking dish and bake in moderate oven 20 minutes.
