Cheese Croquettes

Ingredients

• 1/2 cup butter
• 1/2 cup flour
• 1/2 cup milk
• yolks of 3 eggs
• 1 1/2 cups cheese cut in small pieces
• 1/2 cup Parmesan cheese
• salt
• cayenne
• paprika

Method

1. 1

   Make a sauce of butter, flour, and milk; stir in yolks of eggs unbeaten, add cheese and cook until cheese softens.

   Remove from stove, season, spread on a shallow buttered dish and cool.

   Cut squares, roll in crumbs, dip in egg, roll in crumbs again and fry in deep fat until brown.
