Cheese Balls

Ingredients

• 1 Tb. butter
• 2 Tb. flour
• 1/4 C. milk
• % C. cheese, cut very fine
• 1/4 T. salt
• 5 drops tabasco
• White of one egg beaten

Method

   Cook butter and flour for 2 minutes.

   Add milk and cook until thick.

   Stir in cheese, salt, and Tabasco.

   Fold in beaten egg white.

   Form into 8 or 10 balls, roll in cracker crumbs, and fry in deep fat.

   Serve at once on toast.
