Caviar Sandwich a la Hildur Alexandria

Ingredients

• Six slices of bread
• three spoons of butter
• one half pound of smoked salmon
• two green peppers
• two hard-boiled eggs
• three tablespoons of caviar
• cayenne pepper
• salt

Method

1. 1

   Slice the bread evenly and cut out with a large biscuit cutter.

   Chop salmon finely, and chop egg whites and yolks separately.

   Cream the butter, mix part with salmon and spread on bread.

   Decorate with caviar, egg whites, salmon, and green peppers.

   Press yolks through a strainer, mix with remaining butter, and pipe around sandwiches.

   Chill, drizzle with aspic, and arrange in a ring on a platter garnished with parsley.
