Cauliflower au Gratin

Ingredients

• One large Cauliflower
• One ounce of brown Bread-crumbs
• One ounce of Butter
• One tablespoonful of Flour
• One gill of Milk
• Three ounces of grated Cheese
• Pepper to taste

Method

   Clean and partly boil the cauliflower, then drain.

   Make a sauce by melting butter, stirring in flour, adding milk, and boiling for 10 minutes.

   Add cheese and pepper.

   Pour sauce over cauliflower, sprinkle with bread-crumbs, and bake in a Dutch oven for 15 minutes until browned.
