Cassolettes of Cucumber

Ingredients

• 8ozs. cold Chicken and Tongue, or Salmon
• 1 large Cucumber
• 2 tablespoonfuls of Mayonnaise Sauce
• The yolk of 1 hard-boiled Egg

Method

   Cut the cucumber into 2-inch lengths and scoop out the inside.

   Vandyke the edge, fill with chicken or salmon mixed with mayonnaise, adding pepper and salt to taste.

   Sprinkle the yolk of egg on top and serve on slices of tomato.
