Cabbage and Potato Soup

Ingredients

• 1 cabbage
• 1 oz. bacon fat
• 4 or 5 potatoes
• 3 pts. water
• 1 pt. hot milk
• 1 slice of toast or French roll
• Seasoning

Method

   Prepare and blanch the cabbage, pressing out the water.

   Melt bacon fat in a saucepan, add cabbage, and fry until it begins to color.

   Add water, bring to a boil, and add sliced potatoes.

   Cook slowly for 1 hour until vegetables are soft, then beat until smooth.

   Add milk and season to taste.

   Serve over toast or French roll pieces.
