Brisket with Onion Sauce

Ingredients

• 3 pounds beef brisket
• Yz cup green onions
• 2 tablespoons fat
• 2 tablespoons flour
• i>4 cups stock
• I egg
• I tablespoon minced parsley

Method

   Wipe the meat with a damp cloth, tie it into a compact shape with strips of cloth.

   Place it in a deep kettle with boiling water (or part of the stock).

   Add soup greens, cloves, and peppercorns.

   Simmer until tender, adding salt when partly cooked.

   Remove meat, discard cloth, place in a baking dish.

   Beat egg and spread over beef, sprinkle with crums, and brown under flame or in hot oven.

   For onion sauce, brown onions in fat, make a brown sauce with fat, flour, and stock, add parsley, and serve.
