Braised Lettuces, 2 (Romaines Braisees)

Ingredients

• 2 or 3 Cos lettuces
• i A small piece of butter
• Stock
• 1 yolk of egg
• Seasoning

Method

   Choose young, tender lettuces, wash, cut off roots and discolored leaves, tie with string, and place in a greased baking dish.

   Cover with stock, cook in a moderate oven until tender.

   Arrange on a hot dish, add egg yolk and butter to remaining stock, season, cook briefly, and pour around lettuces.
