Boiled Tongue

Ingredients

• run a skewer through the root of the tongues
• tie a string round the point of the skewer

Method

1. 1

   Soak the tongue for two hours, skewer it, and tie it to form an arch.

   Boil for about three hours, then immerse in cold water and remove the skin.

3. 3

   Press between two dishes with a weight, trim, and serve with spinach or veal jellies.
