Boiled Rabbit with Onion Sauce

Ingredients

• 1 rabbit
• 4 or 5 onions
• 1 or 2 oz. butter
• 1£ oz. flour
• 1 cupful milk
• Salt
• Pepper
• Rolls of bacon

Method

   Clean the rabbit and truss it for boiling.

   Put the rabbit into a saucepan with hot water to cover, add a little salt, and bring to the boil.

   Skim well and add the peeled, scalded, and cut onions.

   Let simmer until tender.

   Lift out the rabbit and keep warm.

   Strain the liquid from the onions, chop them, and make a sauce by melting butter, adding flour, and mixing smoothly.

   Pour in 2 cupfuls of the liquid, stir until boiling, then add onions, seasonings, and milk.

   Pour the sauce over the rabbit.
