Beef Heart, Stewed

Ingredients

• 1 beef heart
• 2 oz. bacon fat
• 1 pt. stock or water
• A bunch of herbs
• 2 onions
• 1 carrot
• 1 table-sp. cornflour
• Salt
• Pepper

Method

   Wash and prepare the heart, season with salt and pepper.

   Heat bacon fat in a stewpan, brown the heart on all sides, then add half the stock, vegetables, and herbs.

   Cover and cook slowly until tender, turning occasionally.

   Keep warm, mix cornflour with remaining stock, add to gravy, stir until boiling, and adjust seasoning.
