Beef as Mock Hare

Ingredients

• 1 lb. stewing beef
• 2 oz. bacon
• 1 oz. flour
• J pt. stock
• A bunch of herbs
• Rind and juice of \
• 1 dessert-sp. red-currant
• i glass port wine
• 1 onion stuck with 4 cloves
• 1 dessert-sp. chopped capers or pickles
• Forcemeat balls
• Salt
• Pepper

Method

1. 1

   Cut meat into pieces, toss in flour with pepper and salt.

   Fry bacon, add meat, and brown.

   Pour in stock, add herbs, lemon rind, and onion.

   Cover and stew until tender.

   Add wine, lemon juice, jelly, and pickles before serving.

   Garnish with forcemeat balls.
