Bean Roll

Ingredients

• Cook lima beans in boiling water until tender
• a tablespoonful of butter to each pint of pulp
• two eggs well beaten
• about half a cupful

Method

1. 1

   Cook lima beans until tender, press through a sieve.

   Add salt, pepper, and butter.

   Stir in beaten eggs and breadcrumbs to thicken.

   Wrap in greased paper and bake for twenty minutes in a quick oven.

   Serve plain or with tomato sauce.
