Batter for Fried Cauliflower

Ingredients

• 4 oz. of flour
• one tablespoonful of sweet oil
• a little tepid water
• the white of an egg

Method

   Mix flour, sweet oil, and tepid water to form a batter.

   Beat well and let it stand for about an hour.

   Coat each piece of cauliflower with the batter and drop into smoking hot clarified fat.

   Fry until golden brown, then drain on cloth or paper and serve hot.
