Barbecued Chicken

Ingredients

• Split down the back as for broiling
• a cup of hot water
• a lump of butter
• Season with salt
• and pepper
• some biscuit dough rolled to about half an inch in thickness

Method

   Lay the chicken breast upward in a baking pan.

   Season with salt and pepper, lay thin slices of fat pork over the breast, put a lump of butter and a cup of hot water in the pan, and bake in a hot oven.

   Before it is quite done, lay strips of biscuit dough across each way forming bars; bake quickly.

   Take up without breaking the crust.

   Thicken the gravy in the pan, add more butter, and serve with the chicken.
