Banana Pudding

Ingredients

• 1 pt. milk
• 3 yolks of eggs
• 2 whites of eggs
• 1 table-sp. cake-crumbs
• 1 dessert-sp. sugar
• A few drops of vanilla
• 4 or 5 bananas
• The juice of  lemon
• 1 table-sp. sugar
• £ glass sherry or rum

Method

   Peel and slice bananas, sprinkle with sugar, lemon juice, and wine, and soak for 30 minutes.

   Make custard by beating eggs with sugar and vanilla, then adding heated milk.

   Strain, add cake-crumbs, and cool.

   Grease a mould, arrange bananas, pour custard over, cover, and steam until firm.

   Serve hot or cold with sauce.
