Asparagus Sauce

Ingredients

• i bunch of green asparagus
• i oz. of fresh butter
• i small bunch of parsley
• 3 or 4 green onions
• i large lump of sugar
• 4 tablespoonfuls of white stock
• salt

Method

1. 1

   Break the asparagus in the tender part, wash well, and put them into boiling salt and water to render them green.

   When tender, take them out and put them into cold water; drain on a cloth.

   Put the butter in a stewpan with parsley and onions; add asparagus and fry for five minutes.

   Add salt, sugar, and white stock, and simmer for another 5 minutes.

   Rub through a tammy, and if not a good color, use a little spinach green.
