Apple Cheesecakes

Ingredients

• Three pounds of apples
• six ounces of sugar
• three ounces of butter
• six eggs
• two lemons
• paste

Method

1. 1

   Peel, core and slice the apples, place in a stewpan with sugar and two tablespoons of water, simmer until tender, then rub through a hair sieve.

   Return apple-pulp to stewpan, add lemon juice and grated rind, re-heat, stir in yolks of six eggs and whites of two, cook until thickens.

   Line patty-pans with paste, fill with apple preparation, cover with whipped sweetened egg whites, and bake in a moderate oven for about fifteen minutes.
