Almond Hedgehog

Ingredients

• G H*®- almonds
• 1 gill of orange flower water
• 6 yolks of eggs
• 5 whites of eggs
• J pint of cream
• 1 oz. of sugar
• lb. of fresh butter

Method

   Beat blanched almonds in a mortar with a little orange flower water to make a stiff paste, then beat in the yolks of six eggs.

   Mix the whites of five eggs with half a pint of cream, sweeten with sugar, and mix with melted butter.

   Set on a slow fire, stirring until stiff enough to form a hedgehog.

   Stick in blanched almonds to resemble bristles.

   Serve with custard made from half a pint of cream and two yolks of eggs, sweetened and flavored with vanilla.
