Almond Cheesecakes

Ingredients

• 2 oz. sweet almonds
• 4 oz. bitter almonds
• 1 of a grated lemon rind
• 2 yolks of eggs
• 2 oz. castor sugar
• 2 oz. butter
• 1 tablespoonful rice flour
• 1 white of egg
• Some scraps puff pastry

Method

   Roll out the paste thinly and line 1.5 dozen patty tins.

   Blanch almonds, chop and pound finely.

   Beat butter and sugar to cream, add yolks and rice flour, beat thoroughly, then add lemon rind and almonds, and finally the beaten egg white.

   Put a teaspoonful of this mixture into each patty case, and bake for 10-15 minutes.
