Alexandra Sandwich

Ingredients

• two parts chicken or game
• one part tongue or ham
• one part minced cooked mushrooms or truffles
• 1oz. of glaze
• a leaf or two of best gelatine
• some good brown sauce

Method

1. 1

   Melt the glaze and gelatine in brown sauce, stir in the mince over heat until hot.

   Turn into a square mould and leave on ice until set.

   Use thinly sliced and trimmed bread to make sandwiches.
