HANDY MEASURES
These will help housewives who are without scales.
1 tablespoonful flour (as much above as below
the rim) 1 oz.
1 level.tablespoonful castor sugar = $02.
1 tablespoonful jam or honey or syrup = 2 OZS.
2 heaped tablespoonfuls breadcrumbs = 1 oz.
4 pint tumbler of flour = 4-5 ozs.
4 pint tumbler of castor sugar = $ lb.
A piece of butter, lard or margarine about the
size of a small egg == 21O7S.
1 hen’s egg weighs approximately = 2 ZS.
1 gill liquid or 7 tablespoonfuls water = } pint
3 pennies = 1 oz.
1 penny and 1 halfpenny = 3402.
SELECTION, STORAGE AND PREPARATION OF
INGREDIENTS
1. Always buy McDougall’s Self-raising Flour and store it
in the bag in which it is purchased on a dry, cool, airy shelf.
Do not use a bin or tin for storing flour.
2. Never mix freshly bought flour, fruit, etc., with old
stock.
3. Put the date on tins, bags and packets of food at the time
of purchase so that they are used in rotation.
4. Label any store jars and tins clearly. Wash and scald them
with boiling water when practicable and dry thoroughly
before re-filling. :
5. Remove the wrapping paper from fats whilst they are still
firm so that the minimum is left on the paper.
