ASPIC JELLY. suggests a mmmber of inexpensive and appetising fillings and the following can be particularly recommended :— The remaining portions of COLD WHITE MEATS, LAMB, POULTRY or GAME—HARD BOILED EGGS—TOMATOES—PRAWNS—COLD VEGETABLES and SALADS in VAKTE TY. Whenever possible, these fillings should be diced, or cut quite small. “ ASPICURE”’ is best served in individual portions, but one-pint or half-pint Moulds may also be used very effectively. FOR GARNISHING AND DECORATING PURPOSES.—Dissolve the ‘* Aspicure ’’ according to the directions, and leave until quite set. Chop finely and garnish any Dish of cold Meat or Salad. TO MAKE A ONE PINT GALANTINE.—Dissolve both packets of ‘““ Aspicure ’’ in the usual way, and leave to cool. Mince or cut very small 6 to 12 ozs. of any cold cooked Meat, and stir into the cooled Jelly. Spoon all into a wetted mould and leave to set. AS A GLAZE.—Dissolve the “ Aspicure’’ in half the usual quantity of water. When cool, brush thickly over the article to be glazed, then leave £0 SCL: 38 SECTION I.
