Stock for Soups. |
Allow 1 quart of cold water to a pound
of meat. et it stand awhile before put-
ting it on back of stove. Cover and sim-
mer slowly. Five hours are required for
boiling a good sized bone. When done
pour into an earthen vessel and skim
when cold. If desired to keep several
days leave the faton until used. This
fat may be clarified and used for cooking
by oe into boiling water. When it
cools all sediment will settle to the bot-
tom and the fat can beagain skimmed
off. Salt the stock when half done. Vege
etables can be added to the stock
in the proportion of one pint cut
vegetables to every gallon. The meat
can be spiced and baked or made into
hash or croqueites. If desired stronger
use 5 pounds of meat to 7 pints of water.
When the stock begins to boil, throw ina
half cup of cold water✪ Stock for Soups and skim,—Graded
Cook Book. -
Clear Tomato Soup.
1 quart of tomatoes; 1 quart white
stock or water; 1 dozencloves; 1 small
onion; 1 bunch of parsley; 1 tablespoon-
ful of sugar; salt to taste. Boil together
for 1 hour in porcelain or agat@gel
Strain through fine sieve. Pw
kettle and add 1 tablespoonfuli
starch, rubbed into a smooth Pee
cold water and a piece of butte
an egg. Season with cayenne or blaek —
pepper✪ Clear Tomato Soup. —The Columbia.
Corn Soup.
Put lcan corn and 1 pint of milk intoa
double boiler and boil % hour. Strain
and. addi cup strong stock; season with
sait and a little red pepper; thicken with
one large spoonful of flour worked well
into 1 spoonful of butter (if the least
lumpy strain again). Just as you take
it off stir in quickly 1 pint of whipped
cream✪ Corn Soup. You Can use peas or celery in

Oyster Soup.
Drain the liquor from 1 pint of oysters
add this to 1 quart of milk, when this
reaches the boiling point, add 1 table-
spoonful of butter. When meited add
the oysters. leaving them only until they
curl, when add % teacup cream and &%
teacup of rolled crackers, Season with °
salt and pepper. Do not add water.-
