This edition has been published in response to the ever- increasing interest taken in Cox’s GELATINE and what it can do. Many of the more elaborate recipes have been simplified and a number of new and economical recipes introduced. Being a protein, it is of definite nutritive value. Its importance in invalid cookery is now generally recognised, as it is of the greatest service as a.means of presenting other articles of diet in an attractive and easily assimilable form, thus making easier the difficult task of tempting the patient’s appetite. While it is an essential component of sweet and savoury jellies, Gelatine plays an important part in the making of cold moulds, souffiés, sponges, creams, and many other types of dishes. It is employed in making certain kinds of confections, and the addition of a little Gelatine to ices ensures a smooth creamy texture. But to ensure uniformly good results in Gelatine Cookery, the Gelatine itself must be reliable and of constant strength. Users of Cox’s INSTANT POWDERED GELATINE know that it is infallible. The strict control in our factory of this pure food product ensures that its strength never varies. HISTORY AND MANUFACTURE Nearly a hundred years ago the proprietors put on the market a culinary Gelatine in shredded form, Cox’s Refined Sparkling Gelatine. This rapidly made a name as a valuable ingredient in cookery, on account of the light and elegant table jellies, which, through its use, became familiar to all who delight in well served meals. Throughout our long history of Gelatine making, our factory has been situated in Edinburgh, one of the most famous centres of scientific endeavour and advance. Unremitting effort has kept Cox’s Gelatine always first in quality, purity, and convenience in use. A notable improvement about the beginning of the present century was the introduction of Cox’s INSTANT POWDERED GELATINE. This is simply Cox’s Gelatine, reduced mechanically to a powder, which, unlike the earlier shredded variety, dissolves rapidly when stirred into warm water. This property, which alone confers a striking superiority in convenience over leaf Gelatines, is accompanied by all the excellent qualities that have always distinguished Cox’s Gelatine.
