Stew the calf’s head till tender, and then cut it into pieces

Eemoulade Sauce: 1 egg yolk beaten, add oil, drop by drop,
stirring continually, and when thick, thin it by stirring in a
few drops of tarragon vinegar. Add chopped capers and parsley✪ Calf's Head in Batter,
and serve.

cloves✪ Calf's Tongue with Tomato Sauce. When done, split the tongue in half, skin it and serve
covered with tomato sauce.
Sheeps' tongues can be cooked in the same wry.
